Mediterranean Quinoa Bowl - The Perfect Macro-Friendly Meal

This Mediterranean Quinoa Bowl is not only affordable and easy to whip up, but it’s full of plant protein and delish!  The recipe is below - I highly encourage you to give it a try! It's a household favorite even for those who aren't carb cycling, but if you are, this is a perfect dish for regular macro day. INGREDIENTS

•1 cup uncooked quinoa (cook according to package - I like to use organic chicken broth or bone broth in mine for more flavor and nutrients)

•One can chickpeas (rinsed and drained)

•2 cups cucumber, peeled and diced

•1/4 cup kalamata olives, pitted and sliced

•1 cup tomatoes, quartered

•1/3 cup crumbled feta (optional)

•1/4 cup red onion, diced (optional - I hate raw onions lol)

•1/2 cup chopped raw spinach (optional - we had it in the fridge so I added it and it was yummy)

+Mix everything together in a large bowl


DRESSING

•1 lemon, squeezed (I use organic lemon juice from the bottle sometimes)

•2.5 tbsp extra virgin olive oil

•salt and fresh pepper, to taste
